A Taste of Ireland: Dinner and Bread
Irish Stew
Ingredients:
3 pounds of lamb neck chops
4 medium carrots
4 medium onions
1 teaspoon of butter
1 lamb fat or beef drippings
4 potatoes
2 1/2 cups of stock or water
1 teaspoon of parsley (chopped)
1 teaspoon of chives (chopped)
Salt and Pepper
Instructions
1) Shred some of the lamb fat and render it down in a heavy casserole.
2) Peel the onions and potatoes, and scrape the carrots.
3) Cut the meat into eight pieces – removing only the excess fat and keeping the bones intact.
4) Cut the carrots and onions in quarters.
5) Toss the meat in fat until it color changes. Repeat with onions and carrots.
6) Add the stock and season carefully.
7) Put the whole potatoes on top.
Simmer gently until the meat becomes cooked, which should take about two hours.
9) Pour off the cooking liquid.
10) Degrease, and reheat in another saucepan. Make sure to check the seasoning at this time.
11) Finally – swirl in the butter, chives, and parsley. Pour the mixture back over the stew.
Irish Whole Wheat Soda Bread
Ingredients
3 cups of flour (whole wheat)
1 cup of flour, all purpose
1 tablespoon of salt
1 teaspoon of baking soda
3/4 teaspoon of baking powder
1 1/2 cup of buttermilk (or yogurt)
Instructions
1) Combine the dry ingredients and mix thoroughly in order to distribute the baking soda and baking powder.
2) Add enough buttermilk to make soft dough that stays firm enough to hold its shape.
3) Knead the dough on a lightly floured board for two to three minutes – until the mixture becomes smooth and silky.
4) Form the dough into a round loaf and place in a well-buttered cake pan that measures eight inches. Some people have also used a well-buttered cookie sheet.
5) Cut a cross on the top of the loaf using a rather sharp knife with flour on it.
6) Bake the bread in a preheated oven at 375 degrees for 35 to 40 minutes (or until the loaf becomes a nice shade of brown and produces a hollow sound when tapped with the knuckles).

Sauerkraut Sausage Meal
Ingredients:
1 lb. organic turkey sausage
1 (32 oz.) jar Bubbies or other sauerkraut, drained
2 C. unpeeled potatoes, thinly sliced
½ C. thinly sliced onion
Directions:
Place sauerkraut in large casserole dish. Top with potatoes and onions.
Cut sausage into about 10 pieces and layer on top of potatoes and onions.
Cover and cook at 350 degrees F for 1 hour, until potatoes are tender. (Serves

Mediterranean Beans
Ingredients:
1 (10 oz.) package frozen baby lima beans
¼ C. chopped onion
1 clove garlic, crushed
1 Tablespoon butter
1 C. diced, canned tomatoes with juice
½ teaspoon dried mint leaves, crushed
Directions:
Cook lima beans according to package directions. Sauté onion and garlic in butter until tender.
Stir in lima beans, tomatoes, and mint leaves. Heat and serve. (Serves 6)
