Grilled Honey Mint Pineapple

What You Need:

1 fresh pineapple
Olive oil cooking spray
4 TBSP honey
2 sprigs of fresh mint

How to Make It:

Peel the pineapple.
Cut the pineapple into 2 in slices.
Spray the grill with the non stick cooking spray.
Heat the grill to medium heat.
Grill the pineapple slices 2 minutes.
Turn and continue grilling for 1 to 2 minutes or until just lightly grilled.
Place the pineapple on a serving plate.
Spread the honey over the top of the grilled pineapple slices.
Garnish with the mint.

4 Servings

Grilled pineapple slices make a great cookout snack. They are healthy and have a sweet taste. Be sure to use a sharp knife when peeling the pineapple and a melon baller works well to remove any eyes that remain in the pineapple after it’s peeled.

Warm Apple Triangles

Warm Apple Triangles

What You Need:

2 (10 in) whole wheat tortillas
4 TBSP cream cheese
1 apple, cored, peeled and sliced thin
cinnamon and sucanat or rapadura

How to Make It:

Lay each of the tortillas out so they are completely flat.
Spread each tortilla with 2 TBSP of the cream cheese.
Layer apple slices on one half of the tortilla.
Fold the other half of the tortilla over the apple slices.
Cut each tortilla into 4 triangles.
Place on pan greased with butter and heat until as warm as you like.

2 Servings

Try using your favorite type of cream cheese even plain tastes great. These also taste pretty good without warming them up.

Freezer Banana Munchies

Freezer Banana Munchies

What You Need:

2 firm bananas

How to Make It:

Peel the bananas.
Cut into bite size chunks.
Place all the banana chunks into a freezer bag.
Place in the freezer for up to two weeks.

2 Servings

Use bananas that are ripened through. The freezer enhances the flavor just be sure the bag is sealed tightly so no ice crystals appear on the bananas. It’s easy and everyone loves this healthy snack.
