Snackable Cherry Mix

What You Need:

4 C old fashioned oatmeal
1 C wheat germ
1 C cold milled flax
3/4 C shredded coconut
2/3 C pine nuts, toasted
1/3 C oil
3/4 C honey
2 tsp. vanilla
1 tsp. nutmeg
1/2 tsp. cinnamon
2/3 C dried cherries

How to Make It:

Place the oatmeal, wheat germ and flax into a large mixing bowl.
Add the coconut and nuts and stir until combined together.
Pour in the oil, honey and vanilla.
Use a rubber spatula to stir until all the dry ingredients becomes completely coated.
Sprinkle in the nutmeg and cinnamon and toss to coats.
Bring the oven temperature to 350 degrees.
Grease a large cookie sheet with a non stick cooking spray.
Place the mixture on the cookie sheet evenly.
Bake 30 minutes stirring about every 10 minutes.
Remove from the oven and very carefully stir in the cherries.
Allow the mixture to cool to room temperature before serving.

16 Servings

This mix will stay fresh in an airtight container for up to 1 week. Always be sure to break up any large chunks before storing. Try this mix as a topping on yogurt for a special treat.

Apple and Peanut Butter Crackers

What You Need:

2 TBSP creamy peanut butter
1 apple, cored, peeled and diced
1 TBSP cinnamon
8 whole grain crackers

How to Make It:

Put the peanut butter into a small saucepan.
Heat on low until melted.
Add the diced apple to the peanut butter and stir to combine well.
Stir the cinnamon into the peanut butter mixture.
Spread one cracker with the mixture.
Place a second cracker on top.
Place in the freezer at least 30 minutes.
Serve when as cold as you like.

4 Servings

This snack has a sweet taste but is a healthy snack for children and adults alike. Try using whole grain graham crackers instead of regular crackers.

Cream Cheese Apricot Halves

What You Need:

1 C cream cheese, softened
12 fresh apricots
1/4C pistachios, chopped fine

How to Make It:

Cut the apricots in half and remove the pit.
Place the apricots on a serving plate.
Fill each apricot half with some cream cheese.
Sprinkle the chopped pistachios over the top.

12 Servings

Flavored cream cheese makes these stuffed apricots taste even better. If you don’t like pistachios or are serving to children try topping them with a few chopped cherries.
