Springtime Pasta with Asparagus

Ingredients:

14 oz of small shell whole grain or rice pasta
1 lb asparagus
2 carrots, peeled
1 small onion, diced
1 celery stalk, cut into thin strips
2 tbsp butter
2 tbsp olive oil
Salt and Pepper
Parmesan cheese

Method:

Boil pasta according to packet instructions. Set aside.

Prepare asparagus by cutting the tough ends off. Half the asparagus widthwise, then quarter them and cut them into thin strips. Use a vegetable peeler and slice carrot into strips as well. Cut the celery into very fine strips.

In a saucepan, heat oil, then add onion and sauté until soft. Add the rest of the vegetables, salt and pepper and stir over medium heat for about 7 to 8 minutes.

Combine vegetables with cooked pasta, season to taste and serve immediately with lots of delicious parmesan cheese.

Polenta Breakfast Surprise

Ingredients:

3 cups milk
2 tbsp unsalted butter
1 tsp honey
½ tsp salt
1 cup stoneground yellow cornmeal
¼ cup golden raisins
2 tbsp maple syrup (plus extra)

Method:

In a heavy saucepan heat the milk, 1 tbsp of butter, honey and salt and bring to a simmer.  While whisking, slowly pour the cornmeal into the milk mixture. Reduce the heat and keep on stirring with a wooden spoon for about 10 minutes. The mixture should thicken. Stir in the raisins and maple syrup.

Grease a loaf pan (8.5×4.5inch) and spoon in the finished polenta. Wrap with plastic wrap and refrigerate for about 2 hours, when it should be set.

Take the loaf out fo the pan and cut into  1/2inch slices.

Heat the remaining butter (use more if needed) in a skillet and fry the polenta slices on both sides until nice and golden.

Serve immediately with lots of delicious maple syrup!

Pick-me-up Morning Juice

Ingredients:

11 large green apples, cored and coarsely chopped
1 large beetroot, peeled and coarsely chopped
2 inch piece of fresh ginger, coarsely chopped

Method:
If you own a juice extractor, push all ingredients through extractor.

If not, process ingredients in a food processor until smooth. Use a sieve with a fine mesh and push through. Enjoy this healthy addition to breakfast!
