Slow Cooker Pork Loin with Apple Juice Glaze
What You Need:
1 (4 lb.) pork loin
1 t season salt
1 t pepper
12 oz. apple juice
2 1/2 t garlic, minced
1 T dried parsley
How to Make It:
Cut the loin in half and sprinkle with the salt and pepper.
Place both halves into a 5 qt. crock pot.
In a bowl whisk together the juice and garlic until well combined.
Pour the glaze over the pork loin.
Cover the crock pot and cook on low for 8 hours.
The meat should be tender and reach 160 degrees on a meat thermometer.
Remove the meat and allow it to stand 10 minutes before slicing.
Makes 12 servings

Lima and Butter Bean Salad

Lima and Butter Bean Salad
What You Need:
2 (15 1/4 oz.) cans lima beans, drained
2 (15 oz.) cans butter beans, drained
2 sweet red peppers, chopped
2 green peppers, chopped
1 large sweet onion, chopped
4 garlic cloves, minced
1/2 C of lemon juice
1/2 C of olive oil
4 T of cider vinegar
2 t ground cumin
1/2 t pepper
How to Make It:
Place both types of beans into a serving bowl and toss to combine.
Add the red peppers, green peppers, onion and garlic and toss again.
In a small mixing bowl whisk together the lemon juice, oil and vinegar.
Add the cumin and pepper and whisk until blended in well.
Pour the mixture over the bean mixture and toss to coat well.
Cover with plastic wrap and chill for at least 1 hour before serving.
Makes 16 servings

Lemon Hot Pepper Shrimp

Lemon Hot Pepper Shrimp
What You Need:
1 lb. butter
3 lemons, sliced
3 T of pepper
1/2 t of salt
2 cloves of garlic, minced
2 T of Worcestershire sauce
1/2 t of hot pepper sauce
2 1/2 lbs. shrimp, uncooked in shells
How to Make It:
Set the oven temperature to 375 and preheat.
Place the butter into a large saucepan and place of medium heat.
Let the butter completely melted add the lemon slices.
Stir in the pepper, salt and garlic.
Pour in the Worcestershire sauce and hot pepper sauce and blend in well.
Bring the mixture to a gentle boil.
Reduce the heat to low, cover the pan and simmer 30 minutes, stirring often.
Lay the shrimp into the bottom of a large roasting pan.
Pour the simmered sauce over the shrimp.
Bake 20 minutes or until the shrimp turn pink.
