Banana Cake


If you're going to let them eat cake, this isn't a bad one to serve! It has less sugar than most cakes, and the extra nutrition of banana and walnuts. If you have little helpers, let them mash the bananas.

2 cups whole wheat flour (can also use 1 1/2 c. flour then 1/2 c. oat flour)
1 1/2 teaspoons aluminum free baking powder
1 teaspoon baking soda
1/3 cup organic butter (softened)
3/4 cup organic sugar, Sucanat or Rapadura
2 organic or free range eggs
2 very ripe bananas, mashed
2/3 cups plain organic yogurt
1/2 cup chopped walnuts (optional)

In a bowl combine flour, baking powder and baking soda. In a separate bowl mix butter and sugar until well combined. Add eggs and mashed bananas to butter mixture. Add to flour mixture along with the yogurt and mix together well (until smooth). Spoon batter into lightly greased baking pan and top with walnuts (if using). Bake at 350 degrees for about 35 minutes or until baked through.
