Blackened Salmon


Preheat oven to 400 F.

4 skinless salmon fillets
2 T. organic butter
1  t. sea salt
2 T. paprika
3/4 tsp. cayenne
1 tsp. thyme
1/2 tsp. garlic powder
juice of 1 lemon

In a large shallow bowl, mix spices and half the sea salt. In a small saucepan melt the butter and then add lemon juice. Heat a large cast iron skillet over medium heat. Dip each salmon fillet into the lemon butter mixture then into the spices. Cook each fillet a couple of minutes per side. Then bake for 8 to 10 minutes, checking after several minutes for doneness.

Excellent with brown rice.
