Ham and Egg Bake

Ingredients:
1 ½ cups cheddar cheese, grated
½ cup mozzarella cheese, grated
6 green onions, sliced
½ lb mushrooms, sliced
1 red pepper, chopped
2 tbsp butter
1 ¾ cups cubed cooked ham
¼ cup flour
8 eggs
1 ¾ cups milk
Salt and pepper to taste
Instructions:
Grease a 13x9x2” baking dish and sprinkle in combined cheddar and mozzarella cheese. Heat butter in a frying pan and gently fry mushrooms, onions and pepper. Stir in ham cubes. Spoon the mixture on top of the cheese.
In a separate bowl, combine flour, eggs, milk, salt and pepper. Pour egg mixture over the ham and cheese, cover and refrigerate overnight.
Take out of refrigerator about ½ hour before baking. Bake in preheated oven at 350ºF for about 35-40 minutes. Let stand for 5 minutes and serve immediately.
A great brunch dish!
