Polenta Breakfast Surprise

Ingredients:

3 cups milk
2 tbsp unsalted butter
1 tsp honey
½ tsp salt
1 cup stoneground yellow cornmeal
¼ cup golden raisins
2 tbsp maple syrup (plus extra)

Method:

In a heavy saucepan heat the milk, 1 tbsp of butter, honey and salt and bring to a simmer.  While whisking, slowly pour the cornmeal into the milk mixture. Reduce the heat and keep on stirring with a wooden spoon for about 10 minutes. The mixture should thicken. Stir in the raisins and maple syrup.

Grease a loaf pan (8.5×4.5inch) and spoon in the finished polenta. Wrap with plastic wrap and refrigerate for about 2 hours, when it should be set.

Take the loaf out fo the pan and cut into  1/2inch slices.

Heat the remaining butter (use more if needed) in a skillet and fry the polenta slices on both sides until nice and golden.

Serve immediately with lots of delicious maple syrup!
