Broccoli Cauliflower Salad
When looking for a tasty and healthy way to incorporate some of the beneficial properties associated with common vegetables on the market, you
may want to try this salad prepared with broccoli and cauliflower. Broccoli is known to lower the risk of stomach cancer and contains a
reasonable amount of fiber, beta-carotene, and other antioxidants. With large amounts of calcium and potassium, broccoli also helps to prevent
osteoporosis and lowers high blood pressure. With cauliflower, a high amount of folate is found, which aids cell growth and replication. The
vegetable also provides a decent supply of fiber, which helps prevent cancer.
Ingredients:
1 bunch broccoli (separated into florets)
1 head cauliflower (separated into florets)
8 strips nitrite free natural bacon (fried and crumbled)
1/3 cup of chopped purple onion
1 cup chopped seeded tomatoes
1 cup natural mayonnaise
1/3 cup Sucanat or Rapadura
2 tablespoons vinegar
Directions:
1. In a large salad bowl, combine the broccoli, cauliflower, bacon, onion and tomatoes. Set aside.
2. In another bowl, combine the mayonnaise, sugar and vinegar – mixing until smooth. Combine.
3. Just before serving, pour dressing over the salad and toss.
