Bruschetta
Bruschetta is a lovely appetizer before dinner, or for a snack anytime.
Ingredients:
1 baguette or loaf of Italian bread sliced thickly
1 large tomato, diced finely
1 small red onion diced
3 cloves of garlic
1/ 4 cup fresh cilantro
2 tablespoons extra virgin olive oil
Sea salt and pepper to taste
Freshly grated organic Parmesan cheese
Directions:
Preheat oven to 350 degrees. Slice bread into thick slices. Rub cracked garlic onto bread slices. Toast in oven on both sides until golden and
crispy. In the meantime, dice tomato, cilantro and onion finely. Mix tomato, cilantro and onion with olive oil and spices. Top bread with the
tomato mix when it is hot and toasted. For extra color and flavor, add a touch of freshly ground Parmesan cheese to each slice.
