Chicken Cacciatoria

Ingredients:

1 chicken (cut up)
28-ounce can of tomatos
2 tsp. garlic (peeled)
8 pearl onions (peeled)
1/4 cup flour
6 cans tomato paste
3 teaspoons sea salt
2 teaspoons sugar
1/8 teaspoon pepper
1 bay leaf
1/4 cup olive oil

Instructions

1) Rub chicken with garlic.

2) Mince the garlic and save.

3) Combine flour, one teaspoon of salt, and 1/8 teaspoon of pepper in a large paper bag.

4) Shake the chicken pieces until coated.

5) Heat oil in a Dutch oven.

6) Brown the chicken a few pieces at a time on all sides. Drain on absorbent paper.

7) Pour off any oil remaining in pan.

8) Return the chicken to the Dutch oven.

9) Add garlic, tomatoes, tomato paste, onions, sugar, one teaspoon of salt, and bay leaf.

10) Cover. Don't forget to baste the meal occasionally with the sauce accumulating in the pan.

11) Simmer for one hour or until chicken becomes tender.
