Chicken Salad Spread

Ingredients:
2 boneless, skinless chicken breast halves, fully cooked (also works well with leftover, non-breaded chicken)
1 ½ cup mayonnaise
1 stalk celery, finely chopped
½ Vidalia onion, finely chopped
½ seedless grapes, diced
1 small apple, chopped
salt and pepper to taste

Directions: Using a food processor or blender, mix chicken, mayonnaise, celery, onion, salt and pepper. Remove mixture to a medium bowl and combine with chopped fruit. For a variation, add chopped walnuts to the mix. Serve on crackers or fresh bread slices.

More variations: Add chopped dried cranberries and omit the grapes and apples. You can also try chopped dried apricots instead of the fruit.
