Chicken Sausage and Bean Stew

This hearty stew is a great way to warm up on a cold night. It's also a great way to sneak in some more "greens" into your child's diet. Most kids will eat this and not notice the green stuff. Serve with crusty bread.

2 T olive oil
2 cloves garlic
1 14 oz container organic chicken broth
1 large can white beans (navy or cannelini)
1 13 oz package all natural chicken sausage, sliced
1 large can diced tomatoes (can use Italian style if you wish)
1 bunch kale or spinach, washed well
1/2 tsp sea salt
1/4 tsp freshly ground black pepper


Heat oil in a large saucepan over low-medium heat. Add sausage and cook until browned, stirring halfway through to flip slices. Add the garlic, beans, broth, and tomatoes. Simmer for 10 minutes. Add kale or spinach and salt and pepper (If using kale, tear into bite sized pieces first). Cook until greens are wilted then serve.
