Baked Apricots with Almonds
Serves 4

Ingredients:
4 apricots, cut in half and pitted
4 tbsp flaked almonds
4 tbsp honey
Pinch of ground ginger

Instructions:
Preheat oven to 400 degrees Fahrenheit.

Lightly grease an ovenproof dish and arrange the apricot halves in a single layer. Top with flaked almonds and drizzle with honey. Then sprinkle with ginger.

Bake in the oven for about 15 minutes or until the apricots are soft and the almonds nice and golden.

Delicious with vanilla ice cream.
