Easy Grilled Quesadillas
Ingredients:
8 soft tortillas
1 pound boneless natural chicken
1 T mexican spice seasonings
1 can pinto beans, rinsed and drained
2 cups rice, cooked
2 cups shredded Mexican blend cheese
Organic sour cream
1 bunch green onions, chopped
Directions:
Cook chicken in a large skillet with a small amount of water.
Remove, chop and shred. Return to skillet; add taco seasoning mix
and water per package directions. Blend well. Heat electric
griddle. Top each tortilla with chicken, beans, rice and cheese.
Cover with second tortilla. Butter griddle and fry until browned on
bottom and carefully flip. Take care to press tortilla together
with spatula. Filling should only cover the center of the tortilla.
Once fully fried, slice and serve with sour cream and onions. For
large tortillas, fill center of a single tortilla and fold over
before frying.
