Fast Peanut And Chocolate Candy

Ingredients:
1 cup organic butter
1 cup Sucanat or Rapadura
1 cup semi-sweet chocolate morsels
½ to 1 cup chopped peanuts

Directions:
Spray a cookie sheet with baking spray and set aside. In a large frying pan, blend butter, sugar and peanuts over medium heat. Stir mixture constantly over heat until it turns a light caramel brown color. Pour mixture into the cookie sheet and spread evenly with a spoon or butter knife. Sprinkle chocolate morsels over the top and cover with aluminum foil. Allow to set for a few minutes and then spread chocolate evenly over the top of the candy. Recover with aluminum foil. Refrigerate until will set. Break apart and serve like peanut brittle.

Substitutions: This candy also works without nuts at all. Almond slivers can also be substituted for peanuts.
