Berry Bread Pudding

Ingredients:

2 cups frozen berries
1 cup dried cranberries
4 to 5 cups of whole wheat or multigrain bread slices
2 cups organic milk
1/4 cup maple syrup
2 tablespoons of granulated sugar
3 1/2 tablespoons arrowroot powder

Instructions

1) In a large bowl, combine and mix together berries, bread, soy milk, maple syrup, cane sugar, arrowroot powder, and optional lemon juice.

2) Pour ingredients into a glass baking dish.

3) Combine nuts, maple syrup, and almond extract.

4) Crumble ingredients over the main dish (make sure to leave about a 1/4" air space around the edge to allow the steam escape).

5) Bake uncovered for 45 minutes.
