Gingerbread

Ingredients

1 cup Sucanat or Rapadura
1 1/2 cup softened organic butter
2 free range or organic eggs
1/4 cup molasses
3 1/4 cups whole wheat pastry flour
2 teaspoons ginger
1/2 teaspoon each of allspice, cinnamon, nutmeg and salt

Instructions

1) In a bowl, combine the sugar and butter. Blend well.

2) Add in the eggs, molasses and remaining ingredients. Mix well to form a dough.

3) Cover and chill the dough for one hour.

4) Next, you will dust some flour on top of your kitchen countertop (or rolling board).

5) Roll the dough until it is 1/8 - inch thick.

6) Cut into shapes and place each gingerbread piece on a lightly greased cookie-baking sheet.

7) Bake for 10 minutes in a pre-heated oven of 350 degrees.
