Hearty Slow Cooker Beef

Ingredients:

1 1/2 pounds organic round steak (cubed)
8 new potatoes (cut into fourths)
1 cup baby carrots
1 onion (thinly sliced)
1 (14 oz) can diced tomatoes
1 1/2 cups natural beef broth
Chopped fresh parsley
Olive oil
Sea salt and pepper to taste

Directions:

Lightly oil a skillet. Sprinkle steak with salt and pepper and brown over high heat on both sides. Layer potatoes, carrots, beef and onion in crock pot. Mix beef broth and tomatoes. Gently pour mixture over other ingredients into crock pot. Cover and cook on low for approximately 8 hours or high for 5 hours or until tender. Sprinkle with parsley and serve.
