Honeymoon Carrots
Did you know that your body can get more of the nutrition from carrots when they're cooked and served with a bit of fat?
Ingredients:
4 C. baby carrots
2 Tablespoons Rapadura or Sucanat
2 Tablespoons honey
2 Tablespoons organic butter
Directions:
Combine sugar, margarine, and honey in a saucepan. Heat and stir constantly until melted. Place in an ovenproof casserole dish, with a lid.
Pour honey mixture over carrots and stir well. Bake at 400 degrees F for one hour. (Serves 6)
