Hummus Dip

Ingredients:

2 cups of canned garbanzo beans
1/3 cup of hulled tahini
2 tablespoons of extra virgin olive oil
¼ cup of extra virgin olive oil
1 tablespoon of freshly diced garlic
¼ cup of lemon juice
2 teaspoons paprika
Sea alt to taste

Directions:

Use a blender to create a smooth paste of beans, tahini, 2 tablespoons olive oil, garlic and lemon juice. Add salt to taste. Set mixture aside and let set at room temperature for several hours. In a small saucepan, mix ¼ cup of olive oil and paprika. Heat on medium temperature and stir constantly until oil turns a rich red color. Strain paprika infused oil through a tightly meshed sieve and set aside. When ready to serve, put hummus mixture into a bowl and create an indentation in the center of the mix. Pour paprika infused oil into the indentation. Serve with pita bread slices, pita chips or party crackers.
