Irish Potato Soup
Ingredients:
½ C. chopped onion
1 C. diced celery
1 Tablespoons all natural bacon (nitrite free), diced
1 (10 oz.) can natural (msg free) celery or mushroom soup
2 Tablespoons sucanat or Rapadura
2 Tablespoons white vinegar
2 2/3 C. organic milk
1 ½ C. diced, cooked potatoes
olive oil or butter
sea salt to taste
Directions:
Coat a large saucepan with olive oil or butter. Sauté onion and celery for about ten minutes. Stir in bacon bits, soup, sweetener, and
vinegar. Add milk and potatoes. Mix well. Lower heat and simmer ten minutes or until mixture is heated though.
