Campfire Beans ‘n’ Sausage

1 yellow onion, sliced into thin circles
1 green bell pepper, sliced into thin wedges
2 tbsp oil
1 can (15 oz) baked beans
1 can (15 oz) butter beans, drained
1/2 lb. cooked smoked sausage, cut into bite size pieces
1/2 cup ketchup
1/4 cup yellow mustard
1/3 cup real maple syrup
1 tsp oregano
2 bay leaves
crusty bread for serving

Heat oil in a large cast iron skillet over a gentle campfire.
Add the onion and green bell pepper and cook for about 4 or 5 minutes or until veggies are softened.
Add the baked beans and butter beans to the skillet and stir well.
Then stir in all the remaining ingredients.
Continue cooking over fire, stirring occasionally, until hot and bubbly.
Serve immediately with large pieces of crusty bread.
Will feed about 4 people.
