Campsite Beef Stew Bundles
1 lb. ground beef, divide into fourths
4 Tbsp butter, cut into fourths
1 tsp salt, divided
1/2 tsp black pepper, divided
4 small red potatoes, scrubbed and sliced very thin
1 carrot, sliced into thin coins
1 small onion, sliced into thin rings
oregano
cumin
heavy duty foil
Tear 4 large pieces of aluminum foil off roll and lay out on work surface.
Put 1/4 of the ground beef, break up a little, in the center of each piece.
Top each ground beef portion with 1 tablespoon pat of butter, then sprinkle even portions of the salt and pepper over each.
Evenly distribute the potatoes, carrots, and onion over the top of each bundle of ground beef.
Sprinkle with a pinch of oregano, cumin, or any other spice you may like.
Fold the foil up over the meat and veggies, forming a tight sealed envelope.
On a medium to slow fire, place the foiled packets (seamed sides up) on a grate or directly on the coals if they are slow enough.
Cook for about 10 to 15 minutes (depending on fire), turning around and moving to cooler areas of the fire as they cook. Do NOT flip over so the seamed side ends up facing down – packets may leak.
Using a tongs or fire-proof gloves, remove packets from fire and let rest for 5 minutes before opening bundles.
Carefully open the bundles and scoop out contents onto plates.
Serves 4.
