Coal Baked Tortilla Pie
2 1/2 lbs ground beef or ground pork or a combination
1 Tbsp oil for frying
1 lb shredded sharp cheddar cheese
1 large sweet onion, chopped
1 bottle of picante sauce (30 oz size)
1 container of sour cream (8 oz size)
1 bag of 10 inch tortillas
1 cup shredded Mozzarella cheese
You’ll need a 10 inch cast iron Dutch oven with a cast iron cover for this recipe. (Or other fire proof baking dish or pot.
Over a campfire with hot coals, put Dutch oven with ground beef and oil and fry until browned.
Spoon out into a separate bowl all but 1 inch of the browned meat from the Dutch oven, making sure the 1 inch of meat is spread evenly over the bottom.
Then add a 1 inch layer of the shredded cheese, a thin layer of onion, a thin layer of picante sauce, and 2 tortillas.
Repeat these layers until the ingredients are used up, keeping in mind you’ll have 5 layers.
Then spread on the sour cream and top with the Mozzarella cheese.
Put the Dutch oven on a slow bed of coals, and set coals evenly on top of the lid until the lid is covered.
Bake this way for about about 20 to 30 minutes depending on the heat of the coals.
Remove from fire, carefully remove coals from the lid with tongs and gently lift cover.
Use a big spatula or spoon to dig down through the layers and serve.
This will feed about 6 to 8 people.
