Cottage Cheese, Bacon and Avocado Baked Potatoes
Serves 4
Ingredients:
4 baking potatoes, washed and scrubbed
4 slices of bacon, cut into small pieces
1 small avocado
¾ cup cottage cheese
Instructions:
Preheat oven to 350º Fahrenheit.
Pierce the potato skin of each potato a few times with a fork. Place them on a baking dish and bake for about 1 hour in the oven. When they are soft inside, take them out of the oven and, protecting your hand with an oven mitt, cut the top of the potato lengthwise. Scoop out some of the potato flesh (use it for a different recipe) and fill the potato shell with the filling.
Filling:
In a small frying pan, fry the bacon pieces on high until well browned. Remove the bacon and put it on a plate covered with kitchen paper to drain.
Cut the avocado in half, scoop out the seed and spoon the avocado flesh into a small bowl. Mash it with a fork until smooth, then stir in the cottage cheese and bacon.
