Prawn Chow Mein with Eggs

(Serves 4)

Ingredients:

12oz medium egg noodles
2 tbsp sunflower oil
1 bunch green onions, shredded
1 carrot, peeled and grated
½ cup broccoli, cut into tiny florets
1 1/3 cup prawns, cooked and peeled
1 garlic clove, crushed
1-inch piece root ginger, peeled and grated
4 eggs, beaten
2 tbsp soy sauce

Instructions:

In a medium saucepan, boil the egg noodles for about 4 to 5 minutes until tender. Then drain.

In a wok, heat half of the oil and stir fry the onions, carrot, broccoli, prawns, garlic and ginger for about 5 minutes.

In a separate pan, heat the rest of the sunflower oil and scramble the eggs lightly. Combine the cooked noodles, eggs, soy sauce and vegetables and serve hot.
