Pressure Cooker Saucy Spiced Shrimp

What You Need:

1 1/2 lbs. large shrimp, peeled and deveined
1 1/2 C of orange juice
1 t of lime juice
1 t grated orange zest
1 t grated lime zest
1 t ground cumin
1 t salt
1 t ground cinnamon
1/4 t cayenne pepper

How to Make It:

Place all the ingredients into the pressure cooker.
Bring the cooker up to high pressure and cook 1 minute.
Remove the cooker from the heat and allow the pressure to fall on its own.
Remove the lid and cool at room temperature for 30 minutes.
Replace the lid and chill the shrimp and sauce in the cooker for 30 minutes.
Place a serving platter over ice.
Remove the shrimp with a slotted spoon and place on the chilled serving platter.

Lemon juice and lemon zest can be used in place of the lime if you prefer. Serve your shrimp with lime or lemon wedges and cocktail sauce.
