Meatballs
2 cups whole grain bread crumbs
3/4 cup organic milk
2 tablespoons minced onion
1 pound chopped natural (preferably grass fed) beef
1/2 pound natural pork sausage
1/4 teaspoon nutmeg
1 teaspoon sea salt
1 free range or organic egg
organic butter
mushroom soup
Soak bread crumbs in milk for 5 minutes. Add onion, meat, seasonings and egg, and blend well with hands. Form small balls with hands and
saute in small amount of butter, just enough to keep meat from sticking to pan. Cook until meat is well browned on all sides. Yield: 20-25 small
meatballs.
Suggestion: To make Swedish meatballs, cook meatballs in cream of mushroom soup.
