Mojave Desert Chili

2 tbsp. olive oil 
1 tsp. ground oregano
3 chopped garlic cloves 
3 tbsp. chili powder
2 chopped onions 
10 peeled and chopped tomatoes
1 chopped green bell pepper 
2 chopped jalapeno peppers (optional)
3 lb. organic beef chunks (not ground) 
1 can beer, your choice
1 tsp. ground cumin

Begin by heating the oil in a large skillet on medium heat. Add the vegetables and sauté them until softened, approximately 5 to 7 minutes. 

Remove the vegetables and lightly brown the beef chunks. Return the vegetables and the seasonings to the skillet and cover.

Reduce heat to summer and allow the mixture to cook for about an hour. Stir often to prevent sticking.
