Black Eyed Peas Made Easy
Ingredients:
2 cups dried black-eyed peas, rinsed
2 cups water, more, if needed
1 yellow onion, finely chopped
6 slices all natural (nitrite free) bacon, cooked with grease reserved
Sea salt and pepper to taste
Directions:
Clean black-eyed peas and soak in water over night. After soaking, place pot on low heat and add more water, as needed. Cook and chop bacon
into fine pieces and add to peas. Pour in 1 tablespoon of bacon grease and add onions. Salt and pepper, as desired. Keep over low heat, stirring
occasionally until peas are soft to the bite. Serve with white rice and corn bread. Tomato sauce may also be added for a more southern flavor.
Serves 4-6.
