Orangey French Toast

Ingredients:

1 slightly beaten egg
1 slightly beaten egg white
3/4 cup organic milk
1 teaspoon organic vanilla extract
8 slices French bread, 1/2 inch thick each
1/4 teaspoon finely shredded orange peel
2/3 cups orange juice
1 tablespoon honey
1 1/2 teaspoon cornstarch
1/8 teaspoon cinnamon

Instructions:

Combine both types of eggs, milk and vanilla in a large bowl. Mix well. Dip bread in egg mixture being sure to coat both sides.  Spray a cookie sheet with non-stick canola spray.  Place coated bread on cookie sheet.  Preheat oven to 450 degrees.  Bake 6 minutes or until bread starts to brown.  Flip and continue to bake 5 to 8 minutes or until golden brown.  To make syrup put orange peel, orange juice, honey, cornstarch and cinnamon in a saucepan.  Cook over medium heat until mixture starts to thicken.  Continue cooking, stirring occasionally, for 2 more minutes.  Serve syrup over French toast.
