Overnight French Toast 



Ingredients:
1/2 (1 pound) loaf whole grain French or Italian bread, cut diagonally in 1 inch slices
4 free range eggs
1 cup organic milk
3/4 cup organic half-and-half
1/4 cup and 2 tablespoons organic butter
2/3 cup organic brown sugar or Rapudura or Sucanat
1/8 teaspoon ground cinnamon
1 teaspoon pure vanilla extract
Optional: 1 10 ounce bag frozen blueberries, 1 cup pecans, chopped

Directions:

Butter a 9x13 inch baking dish.  Arrange the slices of bread in the bottom.  In a large bowl, beat together eggs, milk, half and half, vanilla and cinnamon.  Pour over bread slices, cover, and refrigerate overnight.

The following morning, preheat oven to 350 degrees.  In a small saucepan, combine butter and sugar; heat until bubbling.  Pour over bread and egg mixture.  If using berries and pecans, add them now. Bake in preheated oven, uncovered, for 40 minutes.
