Pineapple Carrot Cake

When looking for a Cajun twist on dessert, consider this recipe, which creates the perfect sweet treat using pineapple, carrots and nuts. A tube pan is required for this recipe.

Ingredients

1 1/2 cups oil
2 cups sugar
2 free range or organic eggs
2 cups carrots (grated)
1 cup crushed pineapple (drained)
1 cup nuts
1 teaspoon baking soda
1/2 teaspoon sea salt
1 teaspoon cinnamon
1 teaspoon natural vanilla extract

Instructions

1) Cream the oil, sugar and eggs together.

2) Add the pineapple and grated carrots to the mixture, followed by the dry ingredients. Pour into pan.

3) Bake for one hour at 350 degrees.
