Red Cabbage Salad
Ingredients:
½ head of red cabbage
½ cup olive oil
½ cup (plus 2 tablespoons) red wine vinegar
3 tablespoons of Sucanat or Rapadura
2 teaspoons sea salt
¼ teaspoon black pepper
3/4 teaspoon onion powder
Instructions:
1) Shred cabbage in an irregular manner into a bowl – some of the cabbage should be finely shredded and the rest coarsely shredded.
2) Add oil, vinegar, sugar, salt, seasoned salt, pepper and onion powder to the cabbage. Mix well.
3) Allow the mixture to stand for several hours (or preferably overnight) in the refrigerator. This permits the flavors to mellow out and in the
end; the slaw receives its deep red shade.
