Rosemary Roasted Chicken


Ingredients:

1 large roaster chicken
1 bunch fresh parsley, finely chopped
1 bunch fresh thyme
5 tablespoons dried rosemary
10 cloves garlic, peeled and crushed
3 1/2 tablespoons grated lemon zest
¾ cup extra virgin olive oil
1 cup white wine
2 teaspoon fresh ground pepper

Directions:

In a blender or food processor, mix fresh herbs, rosemary, lemon, garlic, pepper, olive oil and wine. Clean chicken and place in a roasting pan with a cover. Pour marinade over chicken and rub inside and all over the exterior. Cover and refrigerate for a day. Preheat oven to 350 degrees. Place chicken in a fresh roaster pan and bake according to package directions for pounds.
