Catalina Picnic Salad
What You Need:
1 (16 oz.) can kidney beans, rinsed and drained
1 (15 oz.) can shoe peg corn, drained
1 zucchini, chopped
1 cucumber, chopped
1 tomato, chopped
1 green pepper, chopped
1 red onion, chopped
6 green onions, chopped
1 (3.8 oz.) can ripe olives, drained and sliced
1 C Catalina salad dressing
1 1/2 C cheddar cheese, shredded
1 1/2 C of corn chips
How to Make It:
Place the beans and corn into a large serving bowl and toss to combine.
Fold in the zucchini, cucumber, tomato, green pepper, both onions and the olives.
Pour the dressing over the mixture and stir until well coated.
Sprinkle the top with the cheese and the corn chips.
Makes 10 servings
Make the most of your garden vegetables with this tasty salad. The dressing gives it a little bite and the corn chips give it a little crunch. Regular corn can be substituted for the shoe peg corn if you prefer.
