Dark Red Bean Salad
What You Need:
3 (16 oz.) cans dark red kidney beans, rinsed and drained
4 hard cooked eggs, chopped
1 C of celery, sliced
1 C of mayonnaise
1/2 C dill pickle relish
1 tsp pepper
1/2 tsp salt
How to Make It:
Dump the kidney beans into a large mixing bowl.
Fold in the chopped egg and sliced celery.
Place the mayonnaise into a smaller mixing bowl.
Stir in the pickle relish until well combined.
Pour the mixture over the kidney bean mixture stirring to coat well.
Sprinkle with the salt and pepper and stir until blended in completely.
Makes 8 servings
To give this bean salad a fancy look when serving place lettuce leaves in the bottom and up the sides of your serving bowl. Carefully spoon the bean salad over the lettuce. Remember if serving this dish outside to keep it as cold as possible with ice.
