Peas and Lima Bean Salad
What You Need:
1 (10 oz.) pkg. frozen peas
1 (10 oz.) pkg. frozen lima beans
1 red onion, chopped
1 c mayonnaise
1 tbsp olive oil
1 1/2 tsp Worcestershire sauce
1/2 tsp salt
1/4 tsp pepper
3 hard boil eggs, sliced
4 green onions, sliced
How to Make It:
Cook the peas and the beans according to the direction on their packages.
Drain them well and set aside to cool.
When cooled place the vegetables in a 1 1/2 qt. glass bowl.
Place the red onion in a small mixing bowl.
Fold the mayonnaise, oil and Worcestershire sauce in with onions.
Sprinkle in the salt and pepper and stir until all the ingredients are combined well.
Stir the mayonnaise mixture into the vegetables well.
Garnish the top with the sliced eggs and green peppers.
Makes 6 servings
This salad is refreshing on a summer day. You can add pimento slices to give it a little color. Frozen green beans, cooked according to the package may also be added.
