Chilled Cheddar Three Bean Salad

Note: You can make this dish anytime, but it makes an especially convenient healthy camping recipe!

Chilled Cheddar Three Bean Salad

1 can (15 oz size) black beans, drained
1 can (15 oz size) kidney beans, drained
1 can (15 oz size) navy beans, drained
1 small green bell pepper, cleaned and diced
1 small red onions, diced
1 cup chunky salsa
1 1/2 cups sharp Cheddar cheese, cut into small cubes

In a large bowl, mix together all the ingredients except the cheese.
Cover the bowl and refrigerate overnight.

Transfer to campsite in covered container with cheese in separate container.
When ready to serve, toss in the cheese and spoon into bowls.

Will serve 4 to 6 people depending on if serving as a side, snack, or meal.
