Pressure Cooker Chicken Soup

What You Need:

1 lb. chicken thighs, boneless and skinless
2 C of chicken broth
1/2 C of wild rice
3 garlic cloves, minced
2 C carrots, shredded
2 T of all natural dry vegetable broth mix
4 C of water
4 shitake mushrooms, chopped

How to Make It:

Place the chicken into the bottom of the pressure cooker.
Pour the broth over the chicken.
Add in the rice, garlic and carrots.
Sprinkle the dry broth mix over the top.
Pour the water into the cooker then add in the chopped mushrooms.
Bring the cooker to high pressure and cook 20 minutes.
Allow the pressure to fall on its own.

There is nothing like a hot cup of chicken soup when you’re feeling a little under the weather. This soup fits the bill because it’s easy to throw together and takes very little time to cook.

Makes 4 servings
