Spicy Hamburger Relish

This relish will stay fresh for up to two weeks when kept in the refrigerator.

Ingredients:

5 large tomatoes
2 medium red onions (finely chopped)
1 fresh red or green chili (finely chopped)
2 to 3 cloves of garlic (finely chopped)
1-inch piece of fresh ginger (peeled and finely chopped)
1/2 cup of firmly packed light brown sugar
1/2 cup of red wine vinegar
1 teaspoon of salt
4 tablespoons of tomato paste
3/4 cup corn syrup
1/2 teaspoon of ground cinnamon
1/2 teaspoon of ground cumin
1/2 teaspoon of ground nutmeg
1/2 teaspoon of ground cloves
2 tablespoons of freshly chopped mint (or cilantro)

Instructions

1) Make sure that your tomatoes are skinned, deseeded, and chopped.

2) Place all of the ingredients (with the exception of the golden syrup, mint or cilantro) into a stainless steel saucepan.

3) Bring all of the ingredients to a boil over medium-high heat.

4) Decrease the heat to low and all mixture to simmer – making sure to occasionally stir.

5) Allow ingredients to simmer for one hour (or until the sauce has become thick).

6) Stir in the golden syrup and cook for five additional minutes – stirring frequently.

7) Remove ingredients from the heat and let cool to room temperature.

8) Stir in the mint or cilantro. Cover.
