Sunflower Seed Cookies

1 1/2 cups softened butter 
1 tbsp. aluminum free baking powder
3 cups all-purpose flour 
1 cup shredded coconut
1 1/2 cups Rapadura or Sucanat 
1 cup sunflower seeds
1 tbsp. baking soda
 
Preheat the oven to 350F.  In a large bowl, cream together the sugar and butter.  Add the flour, baking soda, and baking powder, mixing well. Stir in the coconut and sunflower seeds until well incorporated. 

Pinch off dough and roll into 1-inch balls, placing them on an ungreased cookie sheet. Bake cookies for 15 minutes or until lightly browned.
