Zesty Shrimp and Cod Soup
Ingredients:
1/2 onion, chopped
1 clove garlic, minced
1 tablespoon chili powder
1 1/2 cups organic chicken broth
1 (4 ounce) can canned green chile peppers, chopped
1 teaspoon ground cumin
1 1/2 cups canned peeled and diced
tomatoes
1/2 cup chopped green bell pepper
1/2 cup shrimp
1/2 pound cod fillets
3/4 cup plain organic yogurt
Instructions:
Over medium heat place a large saucepan sprayed with low fat
canola nonstick spray, sauté onion until translucent. Add
garlic and chili powder and continue to sauté for 3 to 4
minutes. Add chicken broth and stir. Add green chile
peppers and cumin and mix well. Bring mixture to a
boil. Lower heat to lowest temperature, cover and simmer for
20 minutes. Remove lid and return heat to medium high.
Add tomatoes, bell pepper, shrimp and cod. Return to a rapid
boil. Lower heat, cover and simmer for 5 more minutes.
Remove lid and stir in yogurt until heated completely.
Tip: Fish are high in Omega 3 fatty acids.
